In an effort to work on my diet in 2017, I have been asked to post some of the things I have been eating... that are ridiculously healthy, and actually taste reallllly good!! I would love to take credit for them, but I can't. I can't cook or bake to save my life, so I got to know someone who can... #wifey

Blueberry Protein Pancakes -Makes 8-10 Pancakes

The Goods:

2 scoops chocolate protein powder

1/2 cup blueberries

1 cup GF flour

1/4 -1/2 cup unsweetened almond milk

2 eggs

1 tsp vanilla

1 tsp cinnamon

a bit of love

The Steps:

Heat a pan on med-high with a tbsp of coconut oil

Put all ingredients in your Vitamix(or blender) and blend until smooth

Pour pancakes of any size directly from your blender(genious!)

Flip once the pancakes start to bubble cooking for about 4mins each side

Serve with Real Maple Syrup (Seriously though, Real Maple Syrup)


*Protein powder used – Orgain Organic Protein (creamy chocolate fudge)

*GF flour – Pamela’s (can substitute oat flower)

*add milk or flour to get the thickness you prefer
