Kegg Salad (a.k.a. Keto Egg Salad)

The Goods:

12 organic eggs

½ cup diced organic celery

½ cup diced organic bell pepper (orange or yellow)

1/3 cup diced pancetta or bacon

2 heaping tbsp mayo (Primal Kitchen is Paleo and Keto friendly)

¾ tsp sea salt

¾ tsp paprika

A pinch of black pepper

A bit of love

The Steps:

Place eggs in a large pot covered in cold water. Bring to a boil on stove.

While boiling, cook bacon or pancetta on the stove at med-high heat until crispy. When the bacon is cooked and crispy, place on a paper towel lined plate.

Once the egg water has boiled remove from heat and cover and let sit for 10-12mins. Then strain and run under cold water for 1min. Peel and dice.

Put all ingredients in a large bowl and mix it all together. Add more mayo if desired.
