Flourless Quiche

The Goods:

12 organic eggs

½ unsweetened almond milk

1 cup chopped broccoli

1 red pepper chopped

¼ cup parsley diced

½ sweet onion diced

1 cup goat feta

Salt and pepper

Dried oregano

EVOO (extra virgin olive oil)

A bit of love

The Steps:

Preheat the oven to 350 degrees. Line a baking sheet with foil. Place the broccoli, onion, and red pepper on the baking sheet and drizzle with EVOO. Bake for 5-10mins or until veggies start to soften.

Grease a 9x13” baking dish with EVOO. Spread baked veggies, parsley and feta in the baking dish. Sprinkle with salt, pepper and oregano. Beat eggs and milk in a large bowl and pour into the baking dish.

Bake for 30-40mins or until a toothpick/fork inserted in the middle of the quiche comes out clean.
