Loaded Sweet Potato Nachos

-makes a cookie sheet of nachos

-approx 35-40mins

-idea taken from mind body green and tweaked

The Goods:

4 small sweet potatoes, thinly sliced

2 tbsp EVOO

2 tbsp lemon juice

1 tbsp sea salt

1 cup shredded goat chedder

1 cup black beans

1 bell pepper, any colour

1 jalapeno

2 large tomatoes, diced

1 avocado, diced

a bit of love

The Steps:

Preheat oven to 400°F and line a large baking sheet with parchment paper sprinkled with ½ of the EVOO, lemon juice and salt.

Place sweet potatoes on sheet and top with other ½ of the EVOO, lemon juice and salt.

Bake for 15-20mins until starting to brown. They will shrink a bit so move then together or overlapping a bit then top with the peppers, tomatoes, beans and cheese.

Bake again until cheese melts (5-7mins).

Top with Avocado


*Feel free to substitute all the toppings for your favourites

*EVOO = extra virgin olive oil

*you may need a fork to eat these nachos because they get real messy

*If you prefer, you may melt the cheese directly on nachos then load with cold toppings before eating (I like my veggies warm)
