Loaded Sweet Potato Breakfast

The Goods:

1 medium sweet potato

2 eggs

½ cup broccoli or green of your choice

1 heaping tbsp goat cheese

pinch of salt

pinch of paprika

1 tsp fresh or dry thyme

2 tsp coconut oil

A bit of love

The Steps:

Scrub potatoes then pierce all over with fork.

Bake potatoes at 400deg for 40mins on a pan lined with foil drizzled with a tsp of coconut oil.

Heat up pan with rest of coconut oil on med heat.

Warm up greens in a pan 3-4mins and set aside.

Cook eggs over easy on same pan, keeping the yolks runny and sprinkling a pinch of salt and paprika on top while cooking.

Slice open the sweet potato lengthwise and load up with the greens and goat cheese. Place runny eggs on top and garnish with thyme.
